The height of the baskets is 27 mm, the reason we chose for this height is that we also wanted that it is suitable for a la peppina machine.
Well we have tested them ourselfs and one of our customers is using the tester(it has a hole diameter of 0,25mm) and we both experienced that the finer grind works better.
It is a little bit more difficult and different to use then the original baskets, but it gives a richer taste to the espresso(that is our experience)
The customer also made a instruction how to use it properly, they use it every single day. It is still a lot of trial and error:
1) 12 grams finely ground coffee (about the same fineness as I use in the little basket, may a touch coarser.
2) Medium-ligth tamp
4) Water at 92-93°.
5). Water tank nearly full.
6) I raise the handle very slowly and preinfuse for 8 seconds.
7) I lower the handle VERY SLOWLY. After I feel some resistance, I slow down even more. I press very lightly into the coffee until the first drips start to emerge. Then I gradually increase the pressure to get a nice centered flow.
When I reach the bottom, I am finished for a ristretto.
9) For a regular espresso, I very slowly return the handle until I hear a couple of gurgles, then I very slowly go back down. I increase the pressure once I feel resistance and produce another flow until 25 mm in the cup or blonding.
